Taco Tuesday’s with homemade salsa verde is pretty much music to mine (and my kids) ears (or should I say – tastebuds?).
While, I do love a good traditional salsa. After growing and harvesting our first tomatillos on the homestead. It’s now, safe to say salsa verde has won my heart.

DIY Salsa Verder Recipe
Ingredients
- 5.5 C. husked and cored tomatillos
- 1 C. chopped onion
- 1 C. chopped peppers (I use a mix of what I have on hand - both hot and mild)
- 6 cloves of garlic
- 1 T Cumin
- 1 tsp. Paprika
- 1/2tsp. salt
- 1/2tsp. pepper
- 1/2 C. pickling vinegar
- 4 T. Lemon or Lime juice (I have used both with a great result)
Instructions
- Have jars ready for canning. Sterilized and hot. I heat mine in a big pot of water while I prepare the salsa verde.
- Place half the husked, washed, tomatillos under the broiled (on low) for about 10-15 minutes. They will be slightly charred and juicy.
- While the are roasting rough chop your onions,peppers, and garlic (I use my vitamix)
- Dump your onions, peppers, and garlic into a stock or mixing pot
- De-husk and wash remain tomatillos - giving them a quick spin in the Vitamix or food processor.
- Add the uncooked tomatillos to your pot of pepper, onions, and garlic.
- Remove broiled tomatillos - let cool for a few minutes. Pulse slightly in Vitamix.
- All all remaining ingredients to stock pot. Hot tomatillos, vinegar, lemon/lime juice, and spices.
- Bring all ingredients to a slow boil - simmer 10-15 minutes.
- Carefully ladle how salsa into prepared (hot jars). Placing sterilized lids and bands proces in a water bath for 15 minutes.
- Remove, let cool, and listen for that beautiful "POP"!
